Howdy Folks,

Happy New Year. 2003 certainly provided a few memories, and I’m looking forward to this coming year with thoughts of peace, progressiveness, and prosperity.

I had the good fortune to visit family and friends throughout North and Central America, and meet many more along the way. New England, Montreal, and Baja California provided me with many lasting memories, as did the historic Matt Gonzalez for Mayor Campaign. However, it is the gracious Garifuna culture of Dangriga, Belize that I thank for having such a profound effect on me. Peace and love of fellow human is possible, as is transcendence of material poverty. I long to return there in the not too distant future, and until that time I will dearly miss my new found friends. I would like to thank my fellow USF students and faculty for making the immersion experience one of discovery and camaraderie.

2004 will see me completing my Graduate Degree in Theology, initiating the process for my next CD, and hopefully participating in more adventures in lands near and far. My wish for you is to have a healthy and happy year, and to question the status quo, while not being mired in a culture of fear.

Drink of the Month:
Irish Car Bomb


~1 pint Stout
~1 shot Irish Cream Liqueur
~1 shot Irish Whiskey

You pour half a pint of Stout in a mug and then in a shot glass pour half a shot of Irish Whiskey and then on top of that pour half a shot of shot of Irish Cream.

Now drop the the shot in the the Stout and chug it before the Irish Cream curdles.




This Month's Recipe:
Boil Up


Whenever one is lucky enough to have the occasion to travel, one of the fondest memories should certainly be the food. Dangriga, Belize is on the Coast, so the Caribbean influence is pronounced. Add to that the fact that the Garifuna are African, and you have a delicious combination. I would have liked to procure the recipe for my favorite Garifuna dish, Hudut, but can’t get it at this time. Hudut is basically plantain with coconut gravy, with a piece of fish. Eaten with your hands, it is very appetizing. Anyway, my second favorite Garifuna dish is Boil Up. Enjoy.

Ingredients

2 (4-inch) pieces salted cod fish, dry
2 pounds yellow sweet potatoes, peeled, and cut into 2-inch chunks
2 green plantains, peeled and halved
6 green bananas (leave the peel on)

Directions

Fill a large stock pot half way with cold water, and bring it to a boil. Add the salted codfish, and cook for 10 minutes. Then add the yams, plantains, and the bananas. Bring all back to a hard boil, then reduce to a gentle boil until everything is tender, about 30 to 35 minutes. Hold in the water until ready to serve, peel the bananas before serving.
